    This is brilliant for dinner on a budget!!

    Try this recipe and turn leftovers into favorite family foods!

    "Make-Your-Own" Casserole

    General Directions:

    Select food(s) from each category or use your own favorites. Combine in a buttered 2- to 2 1/2- quart casserole dish. Cover and bake at 180 C/350 F for about 50 minutes to 1 hour or microwave using 50% power for about 15 to 30 minutes, rotating or stirring as necessary. Heat until steaming hot (165 F) throughout.

    Starch - select ONE:

        * 2 cups uncooked pasta (macaroni, penne, spiral, bow tie), COOKED
        * 1 cup uncooked long-grain white or brown rice, COOKED
        * 4 cups uncooked noodles, COOKED

    Protein - select ONE:

        * 2 cups cooked ground beef
        * 2 cups cooked and diced chicken, turkey, ham, beef, or pork
        * 2 cups chopped hard-cooked egg
        * 2 (6 to 8-oz.) cans fish or seafood, flaked
        * 2 cups cooked or canned dry beans (kidney, etc.)

    Vegetable - select ONE:

        * 1 (10-oz.) pkg. thawed and drained frozen spinach, broccoli, green beans, green peas
        * 1 (16-oz.) can green beans, peas, carrots, corn, drained
        * 2 cups sliced fresh zucchini

    Sauce - select ONE:

        * 2 cups white sauce or 1 can sauce-type soup (mushroom, celery, cheese, tomato, etc.) mixed with milk to make 2 cups
        * 1 (16-oz.) can diced tomatoes with juice

    Flavor - select ONE or MORE:

        * 1/2 cup chopped celery, 1/4 cup chopped onion, 1/4 cup sliced black olives
        * 1 - 2 teaspoons mixed dried leaf herbs (basil, thyme, marjoram, tarragon)
        * Salt and pepper to taste

    Topping- select ONE or MORE:

    If desired after heating, place on top:

        * 2 tablespoons grated Parmesan cheese
        * 1/4 cup shredded Swiss, Cheddar, or Monterey Jack cheese
        * 1/4 cup buttered bread crumbs
        * 1/4 to 1/2 cup canned fried onion rings

    Return casserole with topping(s), uncovered, to oven for about 10 minutes or to microwave for about 2 minutes.

    Pistachio gelato rocks. Haven't had it for ages but this Italian restaurant in NZ used to make their own. They did hazelnut too, which is a great one to go with the pistachio.

    Ofcourse it was dry! And the first photo is spare ribs we made last night  Afro It's also a picture of me in the background lol. I'm holding the pizza in the second photo too.

    Do you have holes in your baking tin to allow the base of the pizza to dry & not go soggy?  Its just that with the amount of topping you have used, it was likely that the moisture would seep down to the pizza base..

    No holes. The dough itself was light and I didn't use any milk ( just strong bread flour, salt, water, yeast and olive oil). It went in the oven for maz 10 minutes. Hmm.. I don't know why it wasn't soggy. I made another one too for myself (bar cheese; I don't do dairy), with the same amount of toppingand that one wasn't soggy either. Tongue

    I made the ribs though. I basted em in HP Classic Woodsmoke Barbecue Sauce (middle one). They so delish!

    That pizza looks divine!! I usually make pizza at home but never make my own dough, I use round pitta bread or naan for the base....but that pizza just looks..scrumptious.

    I just eat ready made food instead.

    I hate ready-made food now. I've learned to love cooking and it's great to be able to make new recipes. I've come far in 1 and a half years, when I originally moved out I could just about fry an egg lol.

    I've only been cooking for around 8 months but I've picked up so much. I still find it unsatisfactory to use pre-packaged sauces in cooking; there's satisfaction in making the sauce yourself. It's amazing how the basic ingredients like salt, pepper, freshly grounded spices, garlic cloves and the like contribute in producing excellent food- much better than stuff you pop into the oven.  grin12
