    Lower fat Chicken Enchiladas


        *   1 boneless skinless chicken breast (cooked and shredded approx 1 cup)
        * 1 tablespoon fresh cilantro (optional)
        * 2 cups fat free salsa  (salsa shouldn't have any fat unless there is cheese in it.)* 1/3 cup low-fat cream cheese, softened
        * 1 tablespoon nonfat sour cream
        * 2 green onions, finely chopped
        * 1/2 teaspoon cumin (to taste)
        * 2 tablespoons canned green chilies
        * 1 jalapeno pepper, seeded and finely chopped (optional)
        * 2 tablespoons low-fat cheddar cheese
        * 2 (7 inch)  tortillas (or wraps..the wraps i have are 0.2g saturated fat, and 3 g total)

    Directions

     
          Preheat oven to 375 degrees.
     
          Combine cream cheese, sour cream, onions, cumin, cilantro, jalapeno and green chilis.
       
          Fold in cooked chicken.
       
          In a small baking dish  layer the bottom with salsa.
       
          Warm the wraps in the microwave and layer 1/4 to 1/3 cup of chicken mixture on each, wrap and place seam side down in dish.
     
          Cover with more salsa and bake a half hour until heated through. Sprinkle with 2 tbs of cheddar cheese and place back in the oven until bubbling.
       
          Serve with extra salsa and sour cream if desired.

    You can double or triple the portions easily.

    I recently came across a few yummy looking low calorie recipes. Might be worth giving them a try Smiley

    Savory Chicken Pasta

    4 servings
    Calories per serving: 400

    Ingredients
    2 cups Whole wheat rotini
    1/3 cup Sundried tomatoes, re-hydrated
    2 tbsp Water
    ½ cup Chicken broth
    2 tbsp Garlic, minced
    1 tbsp Olive oil
    16 oz Cooked chicken breast, no skin, diced

    Instructions
    1. Cook rotini according to package directions. Drain and set aside.
    2. Add tomatoes to a bowl and pour over boiling hot water.
    Let sit for several minutes until soft. Drain and chop tomatoes.
    3. In a separate bowl, mix the chicken broth, garlic and olive oil.
    Heat covered for 1 minute in the microwave.
    4. Add cooked chicken and tomatoes to pasta. Pour in broth mixture and toss.
    Optional garnish: Sprinkle with fresh, shaved parmesan.


    Cheesy Bean Wrap

    4 servings
    Calories per serving: 450

    Ingredients
    4 Whole wheat tortillas
    2 cups Refried beans
    4 tbsp Salsa
    4 Lettuce leaves
    8 oz Cheddar cheese

    Instructions
    1. On each tortilla, spread ½ cup beans and top with 1 tbsp salsa,
    1 lettuce leaf and 2 oz cheese.
    2. Roll up and enjoy.
    Suggestion: Warm the wrap in a microwave to
    melt the cheese.


    Lemon Herb Fish Packages

    4 Servings
    Calories per serving: 450

    Serve with ½ cup brown rice and 1 cup steamed broccoli

    Ingredients
    4 Tilapia fillets (450g) or other white fish
    4 tbsp Seasoned Dressing (see below recipe)
    4 Lemon wedges

    Instructions
    1. Preheat oven to 350?F.
    2. Prepare dressing as per recipe.
    3. Cut 4 pieces of foil large enough to wrap each fillet of fish.
    4. Place a fi llet in the middle of each piece of foil.
    Spread one 1 tbsp of dressing over each fillet and wrap foil to
    completely cover the fish. Make sure that edges are pointed upward
    to prevent moisture from leaking out of foil during cooking.
    5. Place the packages of fish on a baking sheet and bake for
    approximately 15 minutes or until fish is completely cooked.
    It should be opaque and the flesh should flake easily with a fork.
    6. Squeeze 1 wedge of lemon over each fillet of fish prior to serving.


    Seasoned Salad Dressing

    4 Servings
    Calories per serving: 100

    Ingredients
    2 tbsp Olive oil
    2 tbsp Balsamic vinegar
    1 tsp Garlic, crushed
    1 tsp Basil leaves
    ½ tsp Oregano, ground

    Instructions
    1. Combine all ingredients in a bowl and whisk.
    2. Add to salad.
    3. Store extra dressing in the refrigerator, covered.
    Suggested Salad: Arugula lettuce, cherry tomatoes and cucumber.


    Chicken Chili Lettuce Wraps

    4 Servings

    Calories per serving: 410

    Ingredients
    1 tsp Vegetable oil
    1lb Ground chicken
    1 Onion, diced
    2 tbsp Chili powder
    4 Lettuce leaves, large

    Instructions
    1. Heat a saucepan over medium heat. Add oil and coat pan. Add chicken, onion and chili powder and cook until chicken is no longer pink. Stir often to prevent burning.
    2. To prepare wraps, spread lettuce leaves onto a plate and fi ll each with equal amounts of chicken chili.
    3. Fold and enjoy!


    Big Spinach Salad

    1 Serving

    Calories per serving: 385

    Ingredients
    2 cups Baby spinach leaves
    1 Pear, sliced
    8 Almonds, chopped
    2 tbsp Low-fat raspberry salad dressing

    Instructions
    1. In a large salad bowl, combine spinach, pears and almonds.
    2. Add dressing and mix well.
    3. Top salad with sliced boiled egg.
    Alternative: Instead of eggs, top salad with canned chickpeas.

    It's like the other day I had 2 corn on the cobs, no butter melted on it or anything, just plain and boiled, and it cost me 200 calories  mysmilie_977

    They all sound really tasty rational1, thanks for posting them.

    I have to be honest though, they seem like such a high calorie content.

    I don't like to pass 300 calories in a meal. 

    I'm insane I think.

    I wonder why the name difference? I never heard the other name.

    Hmm... well if you're only eating 3 meals a day, then 300 calories isn't enough. You can figure out how many calories you should eat a day. Look up a calorie needs calculator to get about how many calories you burn in a day (based on height, weight, age and activity level), then eat less than that. 1 pound of fat is 3500 calories, so to lose 2 pounds (about 1 kilo) a week, eat 1000 fewer calories a day than you burn. And that's a pretty good weight loss rate too.. losing much more than that isn't really healthy, and is also difficult to keep up.

    Well I'm doing two meals a day.  breakfast and a really good lunch.

    My breakfast was a bowl of weetabix with milk and a spoonful of sugar to make the weetabix go down, and my lunch was a weight watchers prepackaged meal that had 243 calories in it.

    I'm finding that if I have my dinner at lunch time I'm not hungry til the next day.

    That's not enough calories to keep your metabolism going.  Your body must be deliberately slowing down weight loss to keep you from getting ill.  Up your calorie intake and take more exercise, you'll lose weight quicker and healthier.

    This is an improvement on my usual techniques, at least food is getting in.  I limited myself to 400/500 calories max for years and years of my life, the only time I wasn't doing it was during pragnancy.

    I mean I am drinking about 500 calories in my tea, so all in all I'm hitting 1000.

    That's not enough calories to keep your metabolism going.  Your body must be deliberately slowing down weight loss to keep you from getting ill.  Up your calorie intake and take more exercise, you'll lose weight quicker and healthier.


    I did though.  That's how come I gained weight.  I stopped the mad diet above ^^ and started eating healthy and gained weight, more weight than I wanted.

    I just got a bit too thin, I need a balance, I can't afford the gym anymore and bike riding is doing F all.  finmad

    You have lived on a concentration-camp starvation diet for YEARS, Berbs - OF COURSE your body snatches up everything it can! you have to re-calibrate your metabolism to a normal, healthy level!

    I lived on 1000 calories for several years, too - was a size 0, then, sigh, but everybody who hadn´t seen me in awhile got scared when they saw, how thin I´d become... and whenever I as much as LOOKED at food, I´d gain weight...

    Learn to eat balanced, healthy meals, walk, ride the bike, get fresh air - LISTEN TO YOUR BODY and after awhile, you will get the balance you want - maybe with a few more pounds, initially, but what you describe IS totally insane - and that´s from someone who is very much obsessed about it... or used to be. It really sounds like you have borderline eating disorder... and come on! Sugar in tea is no substitute for greens, fruits etc! Weetabix is shyte - try oatmeal (with some raisins, nuts etc, - tastes yummy!), yoghurt or milk and fresh fruit for breakfast (no sugar needed). Eat fresh fruit (apples, pears, plums - not bananas so much or grapes), vegetables as much as you like - DON`T starve yourself! You´ll only teach your body to go into "starvation and survival´" mode.

    the breakfast IS yummy, and makes you FEEL good, too! I usually have half a bananan and half an apple or pear or peach sliced in it, and some cottage cheese - here´s my favourite mix by Seitenbacher (wholewheat, no sugar or other additives!)

    Why? What's the point? You better fucking munch as much as you need next time or else. If you were living with me you wouldn't know what hit you. I dont think Ive ever had a meal that I havent eaten properly in. You should do the same.

    Anyway my shopping list has been updated to include plenty of fish and veg, fruits and yummy low fat yoghurts.

    I'm still not going to eat dinner though, I watched an interview years ago where they interviewed this lady who was in her late 80's who only ever ate one meal a day and she looked fine.

    That's what I'm trying to do now.

    Can't wait for my delivery to turn up, I usually only buy enough food for the kids and a few bits for myself but I planned out a menu for my lunches that is way better than my normal food intake lol.

    Tomorrows lunch is going to be an awesome creation of mine.
