    I know we have a few vegetarians (and vegans?) in the hizzouse (forum). I'm 3 months strong into the journey and I need new ideas and recipes. Share your delish veggie (or vegan) dishes here.

    My current favourite is Mahshi. It's basically just stuffed vegetables. The vegetables are usually stuffed with minced meat and rice. I replace the meat with more herbs and quinoa and it's fucking splendid.

    Oooh great idea for a thread Afro I've been an on-and-off vegan for a few years. I'll look for recipes and/or try to write down things I tend to improvise. I love quinoa and tofu as meat substitutes. We tend to use Yves products too, especially in some desi (south asian) dishes and in pasta sauces. Very yummy.

    I've been an on-and-off vegan for a few years.

    I'm sure you've been asked this a million times but enquiring minds want to know; is it difficult being a vegan? Or is it the same leap you make to become a vegetarian?

    If anything I've saved a shit load of money by going vegetarian. Meat is so expensive.

    It's difficult until it's not Smiley It's actually quite easy to go vegetarian - veganism is definitely harder, which is why I slip sometimes. But it's ok. Even if you are only cutting back on meat, or avoiding meat/animal products once a week or so, it's a good start.

    As for more expensive, y'know it used to be the case. But I have found that in the last 10 years, it's getting quite a bit more commonplace to find vegetarian options that are in the same price range as meat/animal products options or even cheaper.

    Especially if you like south asian foods, there are lots of veggie dishes as Indian food has evolved to suit vegetarian tastes of many people who live in that region.

    This site is great for all kinds of recipes (with a focus on south asian dishes, but also has many others). And they have a great selection of vegetarian curry recipes: http://showmethecurry.com/category/curries - I've tried some of their recipes before and they always came out great. A bit on the mild side, which most people tend to prefer anyway. You can always increase the amount of spices/herbs you put if you like your curries and dishes a bit richer.

    I don't get veganism and vegetarianism.

    If it's about the impact meat production has on the environement then it would make sense to cut down on meat but going off meat completely seems a bit extreme.

    If it's to be against animal cruelty then you can still advocate for humane slaughtering methods that minimize the pain to the animal.

    I mean we humans are omnivores so eating meat it something natural and I think going vegan is something similar to trying to repress your sexuality.

    I think it's never a good idea to repress natural urges to eat meat or have sex.

    Everything is good in moderation 


    But to each their own I guess  Smiley

    In my opinion a life without curiosity is not a life worth living

    Thanks Allat, the site looks great, booked marked it. I've only made chicken curry and minced meat in Asian style, never had the confidence to try other dishes, plus my tummy doesn't do well with a lot of spices (funny right? lol), so I'd just make the mild version.

    I discovered some Indian food stores today, so I know where I can get the supplies from too. I'll look around for the meat substitutes.

    Ok this is just a snack recipe but it is so good that I have to share it with y'all. It's from the "Show me the curry" site I was talking about.

    Healthy Kale Chips

    Ingredients:

    Kale – 1 bunch, washed well and shaken dry
    Olive Oil – 1 Tbsp
    Chaat Masala – 1/2 tsp or to taste
    Red Chili Powder – 1/2 tsp or to taste
    Salt – to taste

    Method:

    Preheat oven to 350F (180C)

    1. Break Kale leaves into 3 to 4 inch pieces, discarding the tough middle stem.
    2. In a small bowl, mix Olive Oil, Chaat Masala, Red Chili Powder and Salt.
    3. Pour mixture over Kale leaves and rub gently so that all leaves are lightly coated with the oil.
    4. Arrange the leaves in a single layer on a baking tray lined with parchment paper or lightly oiled.
    5. Bake for 10 – 15 minutes until leaves are lightly browned. Do not over bake.
    6. Allow chips to cool completely before eating.

    The idea isn't to go for meat substitutes (if you meant foods like tofu, and Quorn products etc) - the idea is to switch out for more veggies and fruits and things you otherwise never/rarely eat as a carnivore. For example, when I became veg, I started eating a lot more kale. In fact, I had never even heard of kale, nor did I realise its importance. It's an amazing superfood.
    Some of my favorites are avocados, almonds (anything almond-based, like almond milk), pine nuts, mushrooms, eggplant... a bunch more, but my life seems to revolve around these amazing foods.

    I've been veg for 5 years and it's been one of the best things I've done for myself. Love food so much more now.

    Rather be forgotten than remembered for giving in.

    Yeah.... no. Not at all. You're completely uneducated about being veg. Please take this type of talk elsewhere.

    Vegetarian/veganism are awesome life choices.

    And I don't have a "natural" urge to eat meat. I'm not "depriving" myself of anything, because I never crave it- always thought red meat was gross.

    I'm going to follow Jema's advice and not go any further -- but I felt the need to correct this- because I used to get similar talk from my family about how I'm supposedly "depriving" myself of meat, and it drove me a bit mad.

    Rather be forgotten than remembered for giving in.

    I do eat meat, but I prefer meals to be heavy on veggies. A new thing I've been doing is shredding veggies, and I love it. I make a bed of spinach and shred a bunch of veggies over the top of it. Some of them it helps to boil for a couple minutes, like potatoes. I like to mix potato, beet, carrot and apple, all raw. Then I top it with a simple dressing of olive oil, balsamic vinegar, white vinegar, salt and pepper. It's a flavor explosion, and very filling from all the fiber.

    If I can get the beets with the leaves on, then I eat those as well. I cut up the stems and saute them with onion in either coconut oil or olive oil, then add the greens until they wilt. I eat that with the same simple dressing.

    Another thing I'll share is how I make lentil soup. I've been making it this way for years, and it always turns out great. I don't really have a proper recipe for it, as I just make it up each time depending on what I have, but I'll try.

    Lentil Soup
    - Dry lentils, a handful or two depending on how much you want to make
    - Any raw veggies you like. I usually use carrots, celery, onion, zucchini, and spinach. Carrots are a must if you want the lovely orange color, otherwise your soup will turn out gray (but still delicious).
    - Olive oil
    - Lemon juice
    - Fresh lemon
    - Salt & pepper, and any other spices you like. Paprika, cumin, chili powder all work well.
    - optional: stick blender

    Put lentils in a big pot filled about halfway with water. Add olive oil and lemon juice generously. Bring to a boil.

    While waiting for the boil, wash and roughly (if blending) or finely (if not) chop veggies. Mostly I leave the peel on, except for carrots. Add veggies to the pot in order of how long it will take to soften, so carrots first, etc.

    Once all the veggies are in, cover and simmer until everything is softened. Smell it part way through and you may want to add more lemon juice. When everything is soft, it's ready to either serve or blend. Use the stick blender directly in the pot to blend it completely smooth. You can also transfer half to another bowl to blend, then mix it back to so you have a combination of blended and chunky. Be careful blending near the surface; it will splatter and it's hot!

    Serve topped with spices and fresh squeezed lemon.

    Oooh I have to try your lentil soup recipe, Luthiel. I'll write up my own daal recipe later... (actually I have 2 or 3 different ways that I make them, depending on the lentils that are around and the taste that I want).

    I'm not a vegetarian, but I can quite happily go without meat for weeks on end. One of my favourite meals is a pile of roasted veggies (aubergine, courgettes, red and yellow peppers, small onions and cherry tomatoes) eaten with spicy couscous and some feta cheese or a yoghourt dip and a blob of harissa on the side. This Jamie Oliver couscous recipe is really tasty http://www.qwerty.co.za/recipes/pasta/couscous.htm. Mine doesn't turn out light and fluffy, as I'm sure couscous should when it's done properly, but the taste makes up for it.

    Another of my favourites is a butter bean and celery dish that my mum used to make. First you lightly fry a big pile of chopped celery in olive oil for a few minutes and then put the lid on the pan so that the celery sweats down and releases its juices. Meanwhile make a thick white sauce seasoned with s&p and some english mustard. Next mix together the celery, white sauce and a load of cooked butter beans. Mix in a bit of chopped parsley if you have any and top with grated cheese; I like to use a tangy strong cheddar. Bake in the oven until crispy on top and eat with roasted tomatoes and crusty bread.

    Looking forward to your dahl recipes allat. I love to eat dahl with just rice, melted ghee, curd and some mango pickle. I have to try and make chapatis again soon. I failed miserably last time and the ones in Sainsburys taste sweet to me.

    Carrots
    Courgettes
    Potatoes
    Spinach (just added because they were going to go bad)
    Coriander

    curry powder (half a teaspoon)
    half a medium onion
    small garlic glove
    salt

    Rice

    The potatoes got a bit mashed up... o.o Probably should've also added a whole onion and more curry powder considering the amount of veggies I added.

    Moroccan food is a really great place to find vegetarian meals, as meat in Morocco is a luxury many families can't afford.

    Most dishes that use meat subititute the meat for vegetables, I like vegetable cous cous, or raisins and caramalised onions with cous cous, or vegetable tagine.

    This video shows you how to make the tagine......I thought about typing it, but this video is too great not to share.  Grin  also, the method he uses to caramlise the onions and raisins, is the same you would do it, and mix it in to cooked cous cous for a scrummy dish that is to die for.

    I'm seriously too lazy to type, but try some moroccan vegetarian dishes, there are more that aren't on there, but if you google you can find even more ideas.

    I'm considering going vegetarian to be honest, as it happens I don't eat a lot of meat anyway (because I can't be sure of the calories Cheesy ) it's seafood I would find hardest to let go, but I had a moment of realisation yesterday, especially regarding my love of shellfish, and realised I may love it, but actually I can't deal with the cruel way shell fish dies anymore, so I'm done with it.  Can't believe it took my brain that long to process that.

    I mostly these days eat olives, cheese, spiced up vegetables in bagels, lentils...occasionally, moussaka often.

    LOL I actually don't eat much really, so it's just a matter of saying to myself that I am now a vegetarian.

    You could just try being a pescatarian and eat only seafood but no other meat. I go through long stretches of that as I also LOVE fish, sushi, shrimp, crab legs etc.

    Lol that would have seemed like heaven the other day but then my daughter needed me to explain to her how crab is cooked, and then i remembered being a kid and hearing them screaming in the pot as they boiled to death (and oddly being torn by it but craving the end result)......and I was a bit disappointed with myself since actually, my love of it just seems rather cruel now.

    I think if I aim to do this, I aim to do it all.

    Gonna be a sad day for sushi though, it's my favourite food in the world.

    Yep. That's the stuff that keeps bringing me back to veganism.

    When I slip off of it, it's almost always due to sushi, crab or sometimes, biryani.
